The winery was established by François Petit from Champagne and Justine Boxler from Alsace in 2015. They met in 2011 when they were studying at university in Strasbourg. Francois' family had two hectares in Champagne and Justine's family had 2 hectares in Alsace so they decided to create a domaine of two regions.

The Champagne produced are based on 2 hectares of vines in Avize planted by François’ great grandfather and grandfather, between the 1930s and 1950s. The yields are low, with an average vine age of 80 years old. They use horses to plough, farming is organic and they make their own compost.

After they established their winery in 2015, they only sold grapes until 2018. They made their first Champagne in 2018 but had to wait another four years to release it.

So this champagne is from François’ father’s stock, wh kept a lot of Champagne in his cellars to sell on his retirement. Francois needed something to sell while his wines/champagnes were aging so these wines represent back vintages from 2008-2016. The base wine was matured in stainless steel and it spent 7 years on the lees. This champagne is a blanc de blanc (100% Chardonnay) with 2 g/l of dosage (so extra brut)
