Lamb cutlets (in Greek κοτολέτες or παϊδάκια) are the most expensive cuts of lamb, but are incredibly delicious and tender. They are taken from the ribs of the lamb and cooked individually, normally over a grill or a barbecue.
These beautiful lamb cutlets were taken from a young free range lamb from my friends hobby farm. 2-3 minute cooking time is all they need complimented with a little salt/pepper but today we made a beautiful marinade with olive oil, lemon and herbs.
