This lasagna recipe is our family favourite, it does take a little work, but it is so satisfying and filling that it's worth it! It's a great way to feed a crowd and a perfect dish to bring to a family gathering. It freezes well. It reheats well. Leftovers are the best.🤩


Ingredients :

Chicken Lasagna
1 Lb minced chicken
1 Medium Onion, finely chopped
3 Garlic Cloves, finely chopped
Olive oil
Salt to taste
Oregano
Basil
Chilli flakes
400g Tomatoes purée/Passata
250g Cream cheese (Garlic and herbs) /Ricotta cheese
1 Egg (Room temperature)
1 Tbsp onion powder
Black pepper
Fresh chopped parsley
Uncooked lasagna sheets

Method:

Start by making the sauce with ground chicken, onions, garlic, herbs and tomato sauce.
Let this simmer while you get the cream cheeses ready. Sometimes I use ricotta with a mixture of 3 kinds of cheese parmesan, mozzarella and cheddar but ricotta is a little bit pricey in Mauritius.

Most importantly I don't like boiling the lasagna sheet because I love the texture of al dente.
From there, it's just an assembly job. A cup of meat sauce, a layer of pasta, more sauce, followed by a layer of cheese. Repeat until you have three layers and have used up all the ingredients.
Bake until bubbly and you're ready to eat!
