Yes, Rumbledethumps is an unusual name for a dish and may have something to do with the sound made when mixing the vegetables together. Other than that I have no idea! This dish hails from the Scottish Borders, and even though I live not too far away in Carlisle, I had never heard of it until recently. It's kind of like the Scottish version of Irish colcannon or English bubble and squeak (yet another strange name) but this is baked in the oven. It can be eaten as a side dish or as a main. It's essentially vegetarian, but you could add leftover roast meat if desired. Either way, it is delicious. The butter and plenty of black pepper give it a wonderful flavour.

Ingredients
60g butter
1 large onion sliced
1/2 a head of white cabbage (I used savoy) shredded
6 medium potatoes boiled
200g of grated tasty cheese
Salt and plenty of freshly ground black pepper
