🔔Shanghai fried noodles are made from Shanghai-style noodles, usually called "Cumian." Cumian are thick Chinese noodles made from wheat flour and water. The word "Cu" means thick, which is why many people refer to them as Shanghai-style noodles. These noodles are typically stir-fried with pork, bok choy, and onion.
To give this Shanghai dish an Italian twist and make it easier to prepare with ingredients commonly found in European supermarkets, you can use overcooked spaghetti instead of Cumian and serve the dish with some grated Parmesan cheese. If you prefer the traditional style, just use the fried noodles.

👉Ingredients:
- 200g pork tenderloin, shredded
- 2 garlic cloves, peeled and grated
- 10g ginger, peeled and grated
- 1/2 tsp Chinese five spice
- 1 tsp light soy sauce
- 1 tsp sesame oil
- 120g carrot, peeled and shredded
- 1 bok choy (250g), shredded
- 2 shallots (50g), peeled and shredded
- 125ml water
- 150g spaghetti
- 10g butter
- 5 tsp dark soy sauce
- Ground salt
- Ground black pepper
- Olive oil
- Spring onion, chopped for garnish
- Parmesan cheese (optional)
- Serves 2

👉Method:
1. Marinate the Pork:
- In a bowl, mix shredded pork with grated garlic, ginger, Chinese five spice, light soy sauce, sesame oil, ground salt, and black pepper. Set aside to marinate.

2. Cook the Spaghetti:
- Cook the spaghetti according to the package instructions. Once cooked, drain and leave it covered in the pot for 20 minutes to make it softer and more noodle-like.

3. Cook the Pork:
- Heat some olive oil in a frying pan over medium heat. Fry the marinated pork until fully cooked. Transfer to a plate and set aside.

4. Cook the Vegetables:
- In the same frying pan, add shredded shallots and butter. Cook until the shallots are soft.
- Add shredded carrots and cook until tender.
- Add shredded bok choy and stir well.

5. Combine Spaghetti and Sauce:
- Pour 125ml of the pasta cooking water into the pan. Stir well.
- Add the cooked spaghetti to the pan and mix thoroughly.

6. Season and Finish:
- Add dark soy sauce and stir until the spaghetti is well coated.
- Season with ground black pepper to taste.

7. Garnish and Serve:
- Sprinkle chopped spring onion on top for garnish.
- Optionally, grate some Parmesan cheese over the dish.
