In this video, I show you how to make a mouthwatering Sambal Stingray. We start by creating an aromatic sambal using shallots, galangal, ginger, garlic, tamarind pulp, chilli padi, shrimp paste, and soaked red dried chillies. The ground masala is cooked in oil for 15 minutes to bring out its rich flavors.

Next, we salt the stingray fillets and wrap them in banana leaves along with sliced onions and Calamansi. These packets are then wrapped in aluminum foil and pan-fried in an iron skillet. The result is a deliciously smoky and flavourful dish.
