What is an Old Ale? This nearly forgotten style of beer is hard to find anywhere but is a really interesting brew. It's a strong English beer style with some cool ingredients, designed for aging, and has loads of toasty and caramel flavors!

Recipe for 8 gallons (30 L) , your efficiency may vary:

"This Old Ale"

8.5% ABV 50 IBU

20 lb Simpsons Maris Otter (83.3%)
1 lb Simpsons Crystal Light (4.2%)
1/2 lb Pale chocolate Malt (2.1%)
1/2 lb Extra Dark Crystal malt (2.1%)
2 lb Lyle's Black Treacle (8.3%)

Mash: Single Infusion mash at 152 F (67 C) for 90 min

Water (ppm): Ca: 60, Mg 8, Na 16, Cl 64, SO4 122, HCO3 0
Add to 13 gal (49 L) spring water: 8g Gypsum, 4g Epsom, 2g NaCl, 4g CaCl2
Adjust mash pH to 5.2-5.6 with lactic acid or slaked lime if needed.

60 min - 1.75 oz (49g) Nugget (16.1% AA)

OG: 1.075

Yeast: Lallemand Nottingham

Ferment at 62 F (16 C) for 10-14 days, gradually ramping up to 68 F (20 C). Condition for 1-2 more weeks after fermentation completes.
