Gajar Halwa is a classic Indian dessert made with grated carrots, milk, sugar, and ghee, flavored with cardamom and garnished with nuts. Here's a quick recipe to prepare this delicious sweet dish:

Ingredients:

1 kg carrots (grated)

1 liter full-cream milk

4-5 tablespoons ghee (clarified butter)

1 cup sugar (adjust to taste)

6-8 cardamom pods (crushed or powdered)

2-3 tablespoons chopped nuts (almonds, cashews, pistachios)

2 tablespoons raisins (optional)


Instructions:

1. Prepare the Carrots: Wash, peel, and grate the carrots.


2. Cook in Milk: In a heavy-bottomed pan, pour the milk and bring it to a boil. Add the grated carrots and cook on low-medium heat. Stir occasionally to prevent sticking.


3. Reduce Milk: Cook until the milk is completely absorbed and the mixture thickens.


4. Add Ghee: Add ghee and sauté the mixture for 8-10 minutes until the carrots are well roasted and the ghee starts separating.


5. Sweeten It: Add sugar and mix well. Continue to cook, as the sugar will release moisture. Stir until the halwa thickens again.


6. Flavor: Add cardamom powder and mix well.


7. Garnish: Stir in chopped nuts and raisins. Reserve some for garnishing.


8. Serve: Serve warm or chilled, garnished with more nuts.
