Healthy, High in Protein & yet suitable for my taste buds - Sprouts Idli is a wonderful fusion of Sprouted Moongs and our traditional South Indian Rava idli. Must try. I have also explained how sprouts are made at home in this video. Go ahead enjoy.

Ingredients :
1.5 cup Moong Sprouts (sabut Moong soak overnight in water then use)
1/4 cup Semolina (Suji/Rava - alternatively Besan can be used)
1 medium sized chopped Ginger Knob
2 chopped Green Chillies
1/4 cup Curd (Dahi)
Salt as per taste
Water (to churn)
1/2 tsp Fruit Salt (Eno)

Method :
In a mixing bowl, take 1.5 cup Moong Sprouts
Add 1/4 cup Semolina (Suji/Rava)
Add 1 medium sized chopped Ginger Knob
Add 2 chopped Green Chillies
Transfer everything in a mixer jar
Add 1/4 cup Curd (Dahi)
Add Salt as per taste
Add little Water & grind to make a smooth batter
(as dosa batter consistency)
Put the steamer on
Grease Idli mould with Oil
Add 1/2 tsp Fruit Salt (Eno) and mix it
(If you wish to make dosa from this batter, no need to add Fruit Salt)
Fill the batter in Idli mould and place it in steamer
Fix the lid and cook for 15-20 min on medium heat
Take the mould out and remove idlis from it
Serve with Sambar & Chutney
