Khatri Mutton Kheema Tapelu:
खत्री मटन खीमा तपेलु :

Ingredients:
1. Mutton. 1.5 Kg.
2. Mutton Keema (coarse) 500 gms
3. Onions. 1.5 Kg.
4. Garlic. 100 Gms
5. Ginger. 100 Gms
6. Fresh turmeric. 100 Gms
7. Green chillies. 70 Gms
(If you eat less spicy, cut down quantity)
7. Cinnamon stick. 4”
8. Cloves (laung). 20
9. Salt to taste
10. Garam masala powder 4Tspoon
11. Kashmiri Red chilli powder 3 Tspoon
12. Butter. 4 Tablespoon
13. Oil. 200 gms
14. Small puris

Method:
1. Make coarse powder of cinnamon & cloves together in motar and pestle (or grinder)
2. Chop onions in roughly big pieces .
3. Grind ginger, garlic, fresh turmeric and green chillies to a smooth paste in grinder.
4. Heat oil in Tapelu (pot).
5. When heated, add coarse powder of cinnamon & cloves.
6. After one minute add washed & cleaned Mutton.
7. Sauté for 10 minutes.
8. Add mutton Keema (minced mutton)
9. Sauté for 10 minutes more
10. After total 20 minutes, spread onions on mutton. Don’t stir or mix. This is very essential.
11. Cover the lid of pot. Pour water on lid. Put weight on lid.
12. Cook for 35 -40 minutes. ( 5 minutes on high 30 minutes on medium flame)
13. Open the lid after 40 minutes.
14. You can see that onion is soft and has released its water.
15. Take out a mutton piece. It should be half cooked.
16. Spread spice paste around the edge of pot.
17. Wash the bowl with water and pour on the surrounding surface.
18. Cover the lid and cook for 40 minutes on low medium flame.
19. Open the lid after 40 minutes.
20. Take out a mutton piece carefully from and check the tenderness.
21. Mutton is tender. (Good Mutton tenders early.)
22. Blend the soft onion gently and manually.
23. Add 3 Tspoon Kashmiri red chilli powder and mix well.
24. Simmer for 3 minutes.
25. Add 4 Tspoon garam masala powder.
26. Mix gently and simmer for 3 minutes more.
27. add 4 Tspoon butter.
28. Simmer for 3 minutes covering lid on low flame.
29. Check the mutton. It is tender.
30. Cover the lid and Turn off the gas and let mutton settle for 5 minutes.
31. Khatri Mutton Kheema Tapelu is ready.
32. Savour the taste with small puris. Added Kheema has enhanced the taste.
