Amazing Popcorn chicken with hot Chipotle sweet chilli dip

Ingredients
BBQ Chilli Sauce

1 x cup sugar
1.5 cups hot water
2 x tsp chipotle chillis (smoked jalapeño)
1/2 cup rice wine vinegar
2 cloves garlic
Season salt and white pepper (good pinch)
1 x tbs corn flour with water to thicken

Chicken

3 x chicken breasts Cubed into bite size bits
2-3 cups buttermilk

Spices
1 x tsp coriander seeds
1 x tsp yellow mustard seeds
Pinch salt and garlic powder
1 s Tsp smoked paprika

Batter
2 x eggs
1 x tbs cornflour
