For the vegan lemon vinaigrette

1 tbsp dijon mustard
1 tbsp yellow mustard
2 tbsp granulated sugar (or you choice of sweetener)
1 clove of garlic, crushed
4 tbsp lemon juice
1/4 cup to 1/2 olive oil (I prefer non virgin, but you use whatever you like)
salt and pepper to taste
pinch of dried thyme
