冬瓜花甲粉絲湯

材料：
花甲一斤
冬瓜一斤
瑤柱4粒
綠豆粉絲適量
薑一大舊
芫荽一棵

處理：
1. 花甲，放大碗內，加入冰粒及清水，放入雪櫃2小時，讓它自動吐沙。
2. 瑤柱，放碗內，洗乾淨，加入大滾水，浸至軟身，保留碗中水分。
3. 粉絲，清水浸至完全軟身。
4. 取出花甲，用生果刀打開殼，清水沖洗乾淨，擎乾水。
5. 綠豆粉絲，已完全浸軟，剪成適當長度，清水洗乾淨，擎乾水。
6. 冬瓜，洗乾淨，切出冬瓜皮，清水洗乾淨。
7. 冬瓜肉，切薄片。
8. 芫荽，清水洗乾淨，切出芫荽頭，切碎。
9. 薑，洗乾淨，拍鬆。
10. 洗乾淨煲。

烹調：
1. 薑、冬瓜皮及冬瓜肉，放入煲內。
2. 加入清水700毫升，大火滾起。
3. 瑤柱，壓碎，連同碗中水分，倒入煲內，同時加入粉絲，冚蓋，大火滾起。
4. 加入花甲，冚蓋，大火滾2分鐘。
5. 加入少許鹽。
6. 灑上芫荽碎。
7. 完成，可享用。

Clams soup with winter melon and mung bean vermicelli

Ingredients:
Clams 1 catty
Winter melon 1 catty
Dried scallops 4 Nos.
Mung bean vermicelli appropriate amount
Ginger (large) 1 No.
Coriander 1 No.

Preparation:
1. Clams, put in a big bowl. Add in iced cubes and tap water. Put in refrigerator for 2 hours. Impurities will be released from them.
2. Dried scallops, rinse with tap water. Add in boiled-up water. Soak until they turn soft and retain the water in the bowl.
3. The vermicelli, soak in tap water until it turns totally soft.
4. Take out the clams, use a fruit knife to open them. Rinse thoroughly. Drain.
5. The vermicelli has been totally soaked, cut in appropriate lengths. Rinse thoroughly. Drain.
6. Winter melon, rinse with tap water. Cut its skin and rinse with tap water.
7. Winter melon flesh, thinly slice.
8. Coriander, rinse with tap water. Cut the root. Chop well.
9. Ginger, rinse with tap water. Beat well.
10. Rinse a pot.

Steps:
1. Ginger, winter melon skin and flesh, put in the pot.
2. Add in 700ml of water, heat up at high flame.
3. The scallops, get them squashed. Put them in the pot together with the water in the bowl. Add in the vermicelli at the same time. Cover up the pot. Heat up at high flame.
4. Add in the clams. Cover up the pot. Heat up at high flame for 2 minutes.
5. Add in little salt.
6. Put coriander cubes on top.
7. Complete. Serve.
