INGREDIENTS

Sella rice/Basmati rice 2.5 cups/650gm
Mutton 1 kg (preferably big size pieces)
Ghee/Oil 150gm(approx)
Onion chopped in small pieces 1 cup
Tomatoes chopped in small pieces ½ cup
Salt
Lemon zest 1/2tsp + 1/2tsp lemon juice (Mutton)
Dried lemon/(lemon zest 1/2tsp+ lemon juice 1/2tsp) for Rice
Raisins 1/3 cup
Grated carrot 1cup
Cashew nuts 10-15 pc
Almonds 10-15 pc

KABSA SPICES PREPARATION

Fennel seed 1/2tsp
Green cardamom 5
Cloves 5
Cinnamon stick 3 inches
Black peppercorn 1/2tsp
Cumin 1tsp
Coriander seed 2tbsp

• Wash rice, soak it in water for at least 1 &1/2 hrs.
• Heat a pan, add kabsa spices, roast it on low flame for few seconds, until it becomes aromatic.
• Let it cool down, grind it to a fine powder.
• Take Mutton in a bowl, add kabsa masala, ginger garlic paste, turmeric powder 1/2tsp, salt to taste, lemon zest 1/2tsp, and lemon juice 1/2tsp, mix everything well cover it, let it sit for at least 1 hr.
• Add 100 ghee in a big size vessel, add chopped onion, saute it on high flame until it turns light golden, add the marinated mutton, keep the flame high and cook it for 5-6 minutes, keep turning the pieces until it becomes brown.
• Add tomatoes and cook it for another 1-2minutes, put mutton in a pressure cooker, add 2.5 cups of water, close lid, and put it on high flame, after the first whistle, slow down the flame, let it cook for 25-30 minutes or until it becomes tender.
• Let the cooker cool down, take out extra water of mutton in the same vessel, add remaining 2.5 cups of water, in case of Basmati rice use ½ cup less water, add dried lemon or combination of lemon zest and lemon juice, raisins, soaked rice and grated carrot, give a good stir, taste the salt, if needed add more salt, cover it, let it cook on high flame for 5 minutes, lightly stir in between.
• After 5 minutes of cooking, slow down the flame and cook for another 10 minutes.
• Give a light stir again, switch off the flame an, and let it sit for 5-7 minutes more, kabsa rice is done.
• Heat 1/2tbsp ghee in a pan, add cashew nuts and almonds, roast it on low flame until it becomes lightly golden, take it out in a plate, add 1 tbsp ghee into the same pan, roast mutton pieces on low flame.

CHUTNEY

Tomatoes ½ cup
Green chili to taste
Garlic cloves 2-3
Salt to taste
• Put tomatoes, chilies, garlic, and salt in a blending jar, grind it to a fine chutney, chutney is ready to serve with kabsa rice, we can also add coriander leaves and some mint leaves into the chutney, both kind of chutney is perfect for kabsa rice.
• To serve kabsa rice in an Arabian style, use a big size Thaal or plate, add rice, place roasted Mutton on top of it, garnish with roasted nuts and serve it with chutney.
