Cookie dough
* Soft butter 150g (2/3 cup)
* Salt 1 tsp
* Double cream 2 TBSP
* Dark brown sugar 75g (1/3 cup)
* Granulated sugar 75g (1/3 cup)
* Plain flour (cooked) 150g (3/4 cup, 3 TBSP)
* Vanilla extract 1tsp
* Chocolate chips 175g ( 3/4 cup, 3 TBSP)
Chocolate fudge sauce
* Double cream 150 ml (1/2 cup)
* Granulated sugar 100g (1/2 cup)
* Water 50g (4 TBSP)
* Dark brown sugar 50g ( 1/4 cup)
* Butter 2 TBSP
* Vanilla 1 tsp
* Cocoa powder 20g ( 3 TBSP)
* Chopped Dark chocolate 35g ( 3 TBSP)
* Tia Maria 1 TBSP ( optional) ( Baileys Irish cream works aswell)

Cheesecake Base

Biscoff 250g ( 8.8 ounces)
* Butter 100g ( 1/4 cup 3 TBSP)
* Cream cheese 600g (2 1/2 cups )
* Double cream 300ml (1 cup)
* Vanilla 1 tsp
* Tia Maria 1 1/2 TBSP (optional) ( Baileys Irish cream works aswell )
* Icing sugar 100g ( 1/2 cup plus )

Helpful Tips
* When making the chocolate fudge sauce, keep the sauce at a low heat all through out the cooking process on the stove. Especially when simmer the sugar syrup at the start
* When spooning the cookie dough mixture onto a tray, keep the pieces small so that it can mix through the cheesecake frosting better
* Make sure tin is lined with parchment paper before adding the biscoff mixture
* Add half cookie dough balls when adding to the cream heese frosting, otherwise the mix will become hard to spread. Save the rest for decoration
* Before drizzling the chocolate fudge sauce. Heat up in the microwave for 5 seconds to loosen the sauce
