For a 20 cm (8 inch) cheesecake:
For the cookie crust:
175 g all-purpose flour
1/2 tsp baking soda
1 pinch of salt
115 g room-temperature butter
100 g brown sugar
35 g granulated sugar
1 large egg
1 tsp pure vanilla extract
150 g chocolate chips
 
For the cheesecake batter:
700 g cream cheese
195 g granulated sugar
1 à 2 tsp pure vanilla extract
2 large eggs
30 g corn starch
150 g sour cream or crème fraîche (full fat)
 
For the cookie dough:
115 g room-temperature butter
100 g granulated sugar
105 g brown sugar
190 g all-purpose flour
1 pinch of salt
1 tsp pure vanilla extract
100 ml whole milk
100 g chocolate chips
 
Pour la ganache:
75 g bittersweet good quality chocolate
75 g heavy cream/double cream
 
Pour la chantilly:
100 g heavy whipping cream/double cream
1 tsp pure vanilla extract
1 granulated sugar
