This video will show you how to make pizza at home, without a mixer, from scratch. I cooked the pizza in the Masterbuilt 1050 using charcoal as the heat source. It turned out amazing. Check out the video to learn more.

Pizza Dough

Regular/Thin Crust (4, 12” pizzas or 3, 16” pizzas)
- 3 ½ Cups Bread Flour
- 1 tbsp Olive Oil
- 1 tsp Salt

Deep Dish
- 2 ½ Cups Bread Flour
- 1tbsp Olive Oil
- 1 tsp Salt

Then mix the following in a separate bowl
- 1 tsp Instant Yeast
- ½ tbsp Sugar
- 1 ½ Cups Warm Water (~110 degrees F or 37-38 degrees C)
Gently stir together these ingredients and let them sit for 5-10 minutes so the yeast can activate

Once the yeast has activated, add the wet mix to the dry ingredients and mix together thoroughly in the bowl.¬

Before you remove the dough from the bowl, flour your surface where you are going to knead the dough.

Once the dough is holding together and is no longer sticking to the bowl, move the bowl to a surface to knead the dough.

Knead the dough thoroughly until it is no longer sticking to the surface or your hands.

Place the dough in a clean bowl and cover the dough with saran wrap (as air tight as possible)

Let the dough sit covered for 3-4 hours. The dough should roughly double in size.

Break the dough into equal size pieces; 3 for 16” pizzas or 4 for 12” pizzas

Cover the doughs in olive oil and line the inside of your containers with olive oil (this helps the dough come out after it’s finished developing AND it adds a complimentary flavor to the dough)

These doughs will be good for about 7 or 8 days. So plan on making your pizzas within 7 days of when you make your dough.





Pizza Sauce (Red Sauce)

- 1, 28oz Can of Peeled Canned Tomatoes (drain all the liquid off of them)
o Or use 10 peeled San Marzano or Roma Tomatoes
- 10 Basil Leaves
- 2-3 Large Cloves of Garlic
- 2 tbsp Olive Oil
- 1 tbsp Kosher Salt
- 1 tbsp Crushed Red Pepper (you can leave this out if you don’t like spicy food)

Put these ingredients in a food processor or blender and blend them until the sauce is smooth
