Paczki. Pronounced PUNCH-key. It’s a delicious Polish tradition that I’m proud to carry on! These are traditionally made for Fat Thursday, the Thursday before the start of Lent. But you can (AND SHOULD!) make them all year long!

Paczki:
1 cup whole milk, warmed to 100-110 degrees F
1 teaspoon sugar
20g active dry yeast
4 tablespoons butter, softened to room temp
50g sugar
2 whole eggs, plus one egg yolk
1 tablespoon Vanilla Extract
1 tablespoon Polish Vodka (Or Spirytus!)
600g all purpose flour (plus a little extra for dusting)
Oil for frying
1 cup sugar (for topping)
1 jar Raspberry Jam (for filling)
1. Combine warmed milk, teaspoon sugar and yeast in a cup. Mix well to hydrate the yeast and allow to bloom for 10 minutes
2. While the yeast is blooming, cream together the butter and 50g sugar in a stand mixer with a whisk attachment until light and fluffy
3. Stir yeast mixture and add to mixing bowl. Allow to mix thoroughly
4. Add eggs, one at a time and allow to mix well
5. Add vanilla extract and vodka and allow to mix well
6. Change to dough hook, and add flour, about ¼ cup at a time until all has been added and a tacky dough has formed.
7. Cover mixing bowl and allow to rise in a warm place for 30 minutes, or until doubled in size
8. Once risen, turn out onto a lightly floured work surface
9. Divide into 12 equal portions (I prefer to weigh in grams, and divide by 12, then weigh and adjust each piece)
10. Roll each piece into a tight ball and place on a sheet pan lined with parchment.
11. Cover balls and allow to rise for 10 minutes
12. Remove cover and using the bottom of a large cup, press each ball into a disc
13. Re-cover and allow to proof for 10 minutes
14. In a large pot or deep fryer, heat enough oil for the donuts to float to 375 degrees F
15. Place donuts in batches into the oil. Cook for about 1-2 minutes and flip, cooking for another 1-2 minutes, until each paczki has reached desired level of browning. They should be a bit on the darker side
16. Remove from oil to wire rack and cook the next batch
17. While the next batch is cooking, toss hot donuts in granulated sugar, one at a time to coat well
18. Continue this until all have been cooked and coated
19. Using a pastry bag with a long tip, fill each paczki with jam. Be careful not to overfill.
20. Allow paczki to cool before devouring!
