A hearty and super flavourful noodle soup bowl with all the toppings you could ask for! It's usually served with fish balls so we had to make a vegan version of that too. Vegan Curry Mee
Serves 2

Blend:
4 red onions
5 cloves garlic
1 inch ginger
1 inch galangal
1 lemongrass

2 tbsp vegetable oil or more
1 cinnamon stick
1 star anise
4 cloves
4 cardamoms
2 curry leaves
1 bruised lemongrass
80g Malaysian meat curry powder or regular curry powder
2 tbsp chili powder (optional)
2 tsp salt or to taste
1 tamarind slice (asam keping)
1 vegetable stock cube
1 litre or 4 cups of water
5 tofu puffs, halved

Vegan "Fish" Flavoured Balls
Makes 22

1 nori (seaweed) sheet
1 tbsp mushroom seasoning
1 tsp white peppercorns
1/2 tsp salt or to taste
250g Omni Meat plant based mince or equivalent

To serve:
Yellow noodles or vermicelli
Asian greens, steamed or blanched
Long beans or snake beans, blanched
Bean sprouts, blanched
Sliced red chilies or bird's eye chilies
Calamansi lime or limau kasturi
