Curry Laksa | Curry Mee | Mikari | Mee Kari | LaksaKari is a delicious spicy curried noodle soup with a variety of toppings.This is a creamy curry soup noodle that is known variously as curry laksa, curry mee or mi kari in Malaysia. The curry-like soup is very fragrant and quite spicy as many spices are added to the soup. The gravy is very rich and creamy with thick coconut milk being an essential ingredient. The soup must have the right blend of spices and addition of condiments to bring out the richness of the gravy.

Ingredients
400ml coconut milk (can substitute with soy milk)
2 cups water
2 pandan leaves, knotted
1-2 tsp salt (to taste)
1 tsp sugar
3 sprigs curry leaves
2 packets fresh or dried vermicelli/wheat noodles/quinoa noodles
½ cup cooking oil
100g bean sprouts, blanched for 30 seconds in hot boiling water
½ cucumber, julienned
4-5 ladies’ fingers or long beans, blanched for 1-2 minutes
1 brinjal, sliced lengthwise, blanched for 1-2 minutes
1 bean curd sheet (optional)
1 tofu, cubed and shallow fried
5-6 tofu puffs, halved
2 bunches mint leaves, for garnishing

For Blending to Paste
5-8 shallots or 1 big onion, sliced3 cm fresh turmeric, sliced, or ½ tsp turmeric powder
3 cm piece ginger, sliced
4 cloves garlic, sliced
3 stalks lemon grass, sliced
3 cm galangal, sliced
3 dried chillies (choose Kashmiri Chilli that is less spicy and gives a better red colour), sliced and soaked in hot water for 30 minutes (use more if spicier version is needed)
1 tsp vegetarian shrimp paste (plant-based, no actual shrimp)
3 candlenuts, quartered (can substitute with cashew nuts)
1 tsp vegetarian seasoning (plant-based)
2 tbsp curry powder
1 tsp coriander seeds, roasted
1 cup water
1 tsp oil

Bahan-Bahan
400 ml santan kelapa (atau susu soya)
2 cawan air
2 helai daun pandan
1-2 sudu kecil garam (ikut rasa)
1 sudu kecil gula
3 tangkai daun kari
2 paket bihun/mi basah atau kering
½ cawan minyak masak
100g taugeh, dicelur
½ biji timun, dipotong halus atau diparut
4-5 biji kacang bendi
3-4 biji Kacang panjang
1 biji terung, potong memanjang
1 keping fucuk (ikut pilihan)
1 keping tauhu keras, dipotong kecil dan digoreng
5-6 biji tauhu kering, dipotong dua
Daun pudina, untuk hiasan

Untuk Dikisar Halus
5-8 bawang merah kecil atau 1 biji bawang besar, dihiris
3 cm kunyit hidup, dihiris
3 cm halia, dihiris
4 ulas bawang putih
3 batang serai, dihiris
3 cm lengkuas, dihiris
3 biji cili kering (pilih cili Kashmiri untuk rasa kurang pedas dan warna merah yg cantik)- dipotong dan direndam dalam air panas selama 30 minit
1 sudu kecil belacan sayuran
3 biji buah keras
1 sudu kecil serbuk perasa sayuran
2 sudu besar serbuk kari
1 sudu kecil biji ketumbar, disangai
1 cawan air
1 sudu kecil minyak
