With long lead times, getting a Workhorse Pit is not an impulse buy. I waited nine months for mine to arrive and spent the last four months testing it out on various cuts of meat, poultry, pork, and sausage. Like most folks, I shopped for my offset smoker for a very long time so making the decision to buy the Workhorse was the culmination of loads of research, watching many YouTube Videos and talking to other pit-masters. Having learned that smaller offsets are more difficult to manage the fire, I looked for an offset that had thicker steel with more heat mass to balance out the up and down spikes of a small cooking fire. I considered getting the larger 1975 pit. However, my cooks are just for the family so I knew I would rarely use that extra space. So, I went with the smaller 1957 to save space and to minimize the amount of wood I needed to burn. I am pleased with my decision. The 1957 Workhorse Pit is a great product of the highest quality. This video is a tribute to that journey.
