For the soup stock :
700g (about) Chicken breast or Thighs - boneless
1/2 tsp fine salt
1 tsp sugar

50 to 80g green parts of leek - chopped
1 tbsp sesame oil
60ml vegetable oil

150ml boiled water

1 tbsp sesame oil
