This Banana Pudding Cake is so yummy. I am always looking for different ways to use up those leftover too-ripe bananas and this recipe is perfect for that. I hope you try it!!

INGREDIENTS

Cake
1 box Yellow Cake Mix
2 Ripe Bananas
1 small box (3.4oz) Banana or Vanilla Flavored Instant Pudding Mix
3 large Eggs
1/2 cup Vegetable Oil
1 cup Water

Filling
1 box (3.4oz) Banana Flavored Instant Pudding Mix
1/2 cups Milk
1 can Sweetened Condensed Milk

Frosting
2 sticks Butter
16 ou. Powdered Sugar
1 teaspoon Vanilla Extract
Heavy Cream or Milk

Vanilla Wafers

Instructions

Preheat your oven to 350 degrees F.

Cut some parchment paper into circles that can fit at the bottom of your 8 inch cake pans. Spray cake pans with non-stick cooking spray and lay the parchment circles inside. Spray again with cooking spray and set aside.

In a large mixing bowl blend the bananas with an electric mixer until creamy.

Add in the water, eggs, and oil and mix until well combined. Add in the cake mix and pudding mix. Mix again and beat for two minutes.

Divide the batter between your prepared cake pans.

Bake in the oven at 350 degrees F according to your box instructions.

Once the cakes have finished baking allow them to cool. I like to place mine in the freezer to get super cold before assembling.

Prepare the frosting
In the bowl of a stand mixer place your two sticks of butter. Beat for two minutes, until butter is light in color. Add your powdered sugar and beat again for an additional two minutes. Add vanilla and a splash of milk or cream to thin out.

Prepare Filling
Mix the pudding with the milk. Once combined add in the sweetened condensed milk.

Crush half a bag of vanilla wafers.

Assembly
Place one cake layer down on your cake stand. Make a rim of buttercream and then place half to three quarters of the pudding mixture in the middle. Spread out evenly. This will be a thick layer. Place the second cake layer down and frost the cake with the rest of your buttercream. (I leave a little to the side for decorating). Take the crushed vanilla wafers and push into the sides of the cake. Once the cake is frosted and the cookie crumbs are all around the sides of the cake, pipe a border along the top. Sprinkle cookies along this border. Fill the center with the reaming pudding mixture and spread out evenly. Chill cake for at least an hour for everything to set.
