This was one of my first pizzas baked in Gozney ARC XL at 68% Hydration, 35 hrs fermented, using 3 different flours / 260g for 12” pizza.
Baked at 445°C a bit slower because of the hydration.

It has a removable 20mm stone floor and dense 2-layer insulation, so it reaches higher temperatures faster and stays hotter longer, ensuring perfect pizzas time after time!
