This is my favourite Cantonese dessert. As time goes by, it seems to be disappearing from most of the Chinese restaurants. It is very simple and easy to make at home, and you can use lotus seeds paste or chestnut purée as filling.

Ingredients: ( 材料)
Tapioca Pearls ( 西米) 40 g
Evaporated Milk (花奶) 40g
Fresh Milk ( 鮮奶) 200g
Caster Sugar (細砂糖) 35g
Unsalted Butter (無鹽牛油) 20g
Big Egg ( 大蛋) 1pc
Salt (鹽) 0.5 g
Custard Powder (吉士粉) 20g
Red Beans (紅豆)100g
Brown Sugar (黃砂糖) 60g

Silicone Spoon (大矽匙)
Fork ( 叉)
Spoon (中型匙)
Whisk (手打器)
Sift (篩)
Gloves (手套)
