Ingredients:
-Rock Salt
-Beef Ribs
Process: cover ribs in rock salt. Start wood/charcoal fire at 5-10 seconds "by hand" heat. Skewer ribs. Cook ribs over fire around 5-8 hours bone-side down. Flip, cook for 30 min fat side down to finish.
For Picaña: salt and sear high heat for a few minutes, then move to lower heat for 10-20 min.
