How To Make Amazing Sourdough Bread from Scratch

Sourdough does not have to be complicated. And I stand by that b/c this starter was literally in the fridge for three months. I took her out, fed her, and she was rocking and rolling like she never left. I'd love to know about your starters and how you maintain them. Right now I am focused on hydration level and making the recipes my own. What are your go to recipes?
