Keto Madeleine Recipe: single batch, makes 7-11 depending on how much batter you put in each mold:

1 eggs
1/4 cup granular monkfruit
1/8 tsp. liquid stevia
1 tsp lemon zest
1/2 tsp vanilla extract
20 g coconut flour (approximately 2 Tbs. + 1 tsp.)
5 g unflavored protein powder (approximately 1/2 Tbs. + 1 tsp.)
1/2 tsp. baking powder
pinch of salt
1/8 tsp xanthan gum
1/4 cup melted butter (if using salted omit the salt)

Whip eggs and sugar for 8 minutes, whip in vanilla and lemon zest. Mix in dry ingredients with spatula then mix in melted butter thoroughly, refrigerate for at least an hour, have heard that overnight is even better but am not that patient. Preheat oven to 325, lightly grease Madeleine molds with some butter on a paper towel and refrigerate or just avocado oil. Scoop batter into each shell and flatten down, bake for 12-14 minutes depending on the amount of batter is in each shell, turning once while baking.

1/2 cup butter (omit salt if using salted)
