Ingredients for
Dhebra
मक्के का आटा - Corn flour - 2 cup (250 grams)
गेहूं का आटा - Wheat flour - 1/2 cup (75 grams)
नमक - Salt - 1 tsp
अदरक मिर्च पेस्ट - Ginger chilli paste - 1 tsp
लाल मिर्च - Red chilli - 1/2 tsp, crushed
अजवाइन - Carom seeds - 1/2 tsp
जीरा - Cumin seeds - 1/2 tsp
तिल - Sesame - 1 tbsp
गरम मसाला - Garam masala - 1/4 tsp
हल्दी पाउडर - Turmeric powder - 1/4 tsp
हींग - Asafoetida - 1 pinch
मेथी - Fenugreek leaves - 1 cup-chopped
हरा धनिया - Coriander - 2-3 tbsp
घी - Ghee - 1 tbsp
दही - Curd - 1/2 cup

रायते के लिये - For Raita
बथुआ - White goosefoot - 125 grams
दही - Curd - 1.5 cup
काला नमक - Black salt - 1/2 tsp
जीरा पाउडर - Cumin powder - 1/2 tsp, roasted
हरी मिर्च - Green chilli - 1/2 no, chopped
हरा धनिया - Coriander - 1-2 tbsp
तेल - Oil - 1 tsp
जीरा - Cumin seeds - 1/2 tsp
करी पत्ता - Curry leaves - 8-10 no
हींग - Asafoetida - 1/2 pinch
कशमीरी लाल मिर्च - Kashmiri red chilli - 1 pinch

How to make Cornmeal Dhebra n Bathua Raita
Combine 2 cups of cornmeal and 1/2 cup of wheat flour.

Add salt, ginger-green chili paste, red chili powder, crushed green chilies, ajwain, cumin seeds, white sesame seeds, garam masala, turmeric powder, and a pinch of asafoetida.

Mix in chopped fenugreek leaves and coriander leaves. Optionally, add ghee and curd for flavor.

Gradually add lukewarm water to form a consistent dough. Let it rest for 15-20 minutes.

For Bathua Raita, boil and crush Bathua leaves. Mix with yogurt, black salt, roasted cumin seeds, green chili, and fresh coriander. Add a tempering of cumin seeds, curry leaves, asafoetida, and Kashmiri red chili.

For Dhebra, roll dough balls into flatbreads. Cook on medium heat with ghee until lightly browned on both sides.
