Today, I'm sharing one of my favorite and most requested recipes. As a doctor who loves to cook, I take pride in providing y'all with delicious recipes that will also benefit your body, and this recipe does just that. Loaded with antioxidants, fiber, vitamins, minerals, protein, and without refined sugar, you'll be wondering how something so healthy can taste so good. And that there is exactly my goal!

Here's the deets:

Pumpkin Protein Pancakes
Dry
1/2 cup buckwheat flour
1/2 cup whole wheat flour
1 tsp baking soda
2 scoop vanilla protein powder
1 scoop collagen
3/4 tsp pumpkin pie spice
3/4 tsp cinnamon

Wet
1/2 cup (~7.5oz) can pumpkin
2 eggs
1/2 cup applesauce
1 cup soymilk
1 tsp vanilla
2 tbsp coconut oil
2 tbsp honey
