This lemon blueberry pound cake is the perfect balance of moist and gooey, and you won't be able to stop eating it. It's made with simple basic ingredients, it's packed with lemon and blueberry flavor, and it can be whipped up in just 5 minutes.

INGREDIENTS LIST
🌱 For the pound cake batter
1 big lemon, juice and zest
250 g (1 cup) plant milk
250 g (1 cup) water
200 g (1 cup) sugar
60 g (⅓ cups) sunflower oil or melted vegan butter
450 g (3 cups) flour
16 g (3½ tsp) baking powder
250 g (1⅔ cups) blueberries

🌱 Lemon Icing
1 cup icing sugar
2 tbsp plant milk
2 tbsp lemon juice
