材料Ingredient
芋泥餡Taro Filling
芋頭Taro 750g
糖sugar 160g
牛油Butter 38g
動物性鮮奶油cream 110g

蛋糕體Cake/6inches
蛋黃yolk 3#
糖sugar 45g
牛奶milk45g
葵花油 cooking Oil 37g
低粉cake flour 90g
泡打粉 B.P 4g
紫薯粉Purple Sweet Potato Powder 8g
蛋白 white 3#
糖sugar 45g

糖Sugar 30
水Water 70

烤箱溫度 140度 40分鐘》160度10分鐘
Oven temperature 140°C/140°C 40min
160°C/160°C 10min

烤箱溫度及時間需依自家烤箱自行斟酌,此溫度時間僅提供參考

製作過程-芋頭餡
1.先將芋頭洗乾淨,切成丁狀
2.上鍋蒸20-25分鐘
3.趁熱的時候加入糖,開始使用電動手打攪拌機打軟,打至均勻
4.加入牛油再次打均勻
5.加入鮮奶油再次打均勻
6.完成,冷藏備用

製作過程-6寸蛋糕體
1.先將蛋黃、糖攪拌均勻
2.加入牛奶、油攪拌均勻
3.加入過篩後的低粉、泡打粉、紫薯粉拌勻即可
4.蛋白與糖打至濕性發泡即可
5.將打好的蛋白霜取出三分之一先與剛剛拌勻好的麵糊拌勻
6.再將麵糊倒回蛋白霜輕翻拌均勻即可
7.倒入模具,烤箱溫度 140度 40分鐘》160度10分鐘。
7.出爐,放涼
8.煮蛋糕糖水,將糖與水煮融即可
9.將蛋糕切片成三等份,在用一個五寸的慕絲圈蓋圈即可
11.準備一份250克的動物性鮮奶油及25克的糖一起打發備用。
12.準備三個擠花袋,一袋放入六齒花嘴及芋頭餡、一袋只需要放入芋頭餡、一袋放入打發好的鮮奶油備用

-組裝蛋糕
1.將五寸慕斯圈裡面先圍住慕斯塑膠片
2.將一片蛋糕體放入底層,塗上糖水,擠入鮮奶油及芋頭餡,再次放上一片蛋糕體,塗上糖水,擠入鮮奶油及芋頭餡,最後一片蛋糕體再蓋上,塗上糖水,這時使用6齒花嘴的芋頭餡擠出玫瑰花型當作表面
3.完成後冷藏1小時,脫模即可食用

Production process- Tato filling
1.First cut taro and cut into cubes.
2.Steam for 20-25 minutes.
3.Add sugar into it while it's still hot, using hand blender to beat until soft and evenly.
4.Add butter beat until evenly.
5.Add whipping cream until evenly.
6.Finish, refrigerator and use later.

Production process - 6 inch cake
1.First egg yolk,sugar whisk evenly.
2.Add milk, vegetable oil whisk evenly.
3.Add sieved flour,baking powder,sweet potato powder stir evenly.
4.Egg white and sugar whisk until soft beat.
5.Take out one third of meringue and mix with batter.
6.Add batter into meringue and fold evenly.
7.Pour into mould,oven temperature is 140degress 40 minutes,160 degrees 10 minutes.
8.Take out let it cool.
9.Boil sugar syrup,melt sugar and water.
10.Cut the cake into three equal piece, using five inch mousse ring to cut.
11.Prepare 250 gram and 25 gram sugar whisk up and keep a side.
12.Prepare three pipping bag, one for six tooth pipping tube and taro filling, one pipping bagfor taro filling, one pipping bag for whipping cream.

Assembly cake
1.Put a five inch mousse ring and round with mousse plastic sheet.
2.Put one sheet cake and coat with sugar syrup, pipping whipping cream and taro filling, put second layer cake and coat sugar syrup, pipping whipping cream and taro filling, cover with last layer of cake and coat sugar syrup, using six tooth pipping tube rose sharpe on surface.
3.Finish and refrigerator one hour, unmold and ready to eat.
