One Pot Lentil and Rice Recipe | Easy Vegetarian and Vegan Meals.

In this video I'll share an easy one pot lentil and rice recipe with you. Rice and lentils makes a great meal / side dish that only requires a few ingredients that can be prepared in one pot. This vegetarian / vegan rice and lentils recipe uses cooked rice, lentils, and seasoning to create a quick, easy and flavorful dish. Eating lentils with rice can delay the rate at which sugars are absorbed in the body because whole grain rice has considerably more soluble fiber than insoluble fiber, which slows the digestive process and allows the body to absorb nutrients. Lentils are considered a superfood / are quite potent legumes, high in protein, fiber, and heart-healthy fats. The flavor of the lentils and rice is so versatile that it can be paired with a wide range of cuisines without looking out of place. ▶️ ONE POT LENTIL AND RICE RECIPE INGREDIENTS: (4 servings approx.)

1 Cup / 200g BROWN Lentils (Soaked/Rinsed)
1 Cup / 200g MEDIUM GRAIN Brown Rice (Soaked/Rinsed)
3 Tablespoon Olive Oil
2+1/2 cup / 350g Onion - chopped
2 Tablespoon / 25g Garlic - finely chopped
1 Teaspoon Dried Thyme
1+1/2 Teaspoon Ground Coriander
1 Teaspoon Ground Cumin
1/4 Teaspoon Cayenne Pepper (optional)
Salt to taste (I added total 1+1/4 teaspoon pink Himalayan Salt)
4 cups / 900ml Vegetable Broth / Stock
2+1/2 cups / 590ml Water
3/4 cup / 175ml Passata / Tomato Puree
500g / 2 to 3 Zucchini (512g including tips) - cut in 1/2 inch thick pieces
150g / 5 cups Spinach - chopped

Lemon juice to taste (I added 1/2 tablespoon)
1/2 cup / 20g Parsley - finely chopped
Ground Black pepper to taste (I added 1/2 teaspoon)
Drizzle of olive oil (I added 1 tbsp of organic cold-pressed olive oil)

▶️ METHOD:

Soak the brown lentils in water for at least 8 to 10 hours or overnight. Soak the MEDIUM-GRAIN brown rice for about 1 hour before cooking, if time allows (optional). Once soaked give the rice and lentils a quick rinse and allow it to sit in the strainer to drain off excess water.

To heated pot add olive oil, onion, 1/4 tsp salt and fry on medium heat until the onions on are browned. ADDING SALT TO ONION WILL RELEASE IT'S MOISTURE AND HELP IT COOK FASTER SO DON’T SKIP THIS STEP. Add the chopped garlic and fry for about 2 minutes or until fragrant. Add thyme, ground coriander, cumin, cayenne pepper and fry on low to medium-low heat for about 30 seconds. Add the soaked/strained/rinsed brown rice, brown lentils, salt, vegetable broth, water and mix well. Increase the heat and bring to a vigorous boil. Once it starts to boil, reduce the heat to medium-low and cook covered for about 30 minutes or until the brown rice and lentils are cooked. DO NOT over cook, we don't want mushy rice.

Once the brown rice and lentils are cooked, add the passata/tomato puree, zucchini and mix well. Increase the heat to medium-high and bring to a boil. Once it comes to a boil, then reduce the heat to medium and cook covered for about 5 minutes or until the zucchini is cooked. Then uncover the pot and add chopped the spinach. Cook for about 2 minutes to wilt the spinach. Turn off the heat. Garnish with parsley, black pepper, lemon juice, drizzle of olive oil and mix well. Serve hot.
This one pot rice and lentil recipe is good for meal prep. It stores well in the refrigerator for 3 to 4 days in an air tight container.

▶️ IMPORTANT TIPS:

👉 THIS RECIPE IS FOR MEDIUM-GRAIN BROWN RICE. If you are using long grain brown rice adjust the cooking time accordingly - long grain brown rice cooks faster comparatively

👉 Adding salt to onion will release it's moisture and help it cook faster so don’t skip it

👉 If the stew consistency is too thick for your liking, add some boiling water to thin it out, DO NOT ADD COLD WATER

👉 Cooking time depends on the type of pot, type of stove, freshness of the ingredients etc. - use your judgement and ADJUST THE COOKING TIME ACCORDINGLY
