Ingredients:

Udupi Rasam Powder:
Coriander Seeds - 3 Glasses
Jeera - 1 Glass
Methi Seeds - 1/3 glass
Byadagi Chilli - 25 nos.
curry leaves - 15 nos.

Udupi Rasam
Oil - 1 tbsp
mustard seeds -1/2 spoon
Curry Leaves - Few
Green Chillies - 3 Nos.
Tomato - 3
Toor Dall - 4 tbsp
Tamarind - 1 small tamarind size
turmeric powder - 1/2 spoon
Jaggery powder - 1/2 spoon
Salt To Taste
Hing - Pinch of it
coriander leaves - few

Steps for udupi rasam powder:
For Rasam Powder(for measurements, refer ingredients section above)

1. Roast coriander seeds in low flame till aromatic and color is changed
spread in a plate, let it cool down
2. Roast Jeera in low flame till aromatic and color is changed
Add this with coriander seeds and let it cool down
3. Roast meethi seeds as well in low flame till aromatic and color is changed
Add this with coriander, jeera and let it cool down completly
4. Now roast byadagi chilies in low to medium flame adding few drops of oil.
Till it turns aromatic and cripsy
once it is done, transfer the roasted chillies in a seperate plate and let it cool down
5. In the same pan, add few curry leaves and roast it till it turns cripsy
add the roasted curry leaves along with coriander seeds, jeera, methi seeds
6. Now First grind the roasted red chillies in mixer jar first. when it is powered well, add the other
ingredients like roasted coriander seeds, jeera and methi , curry leaves and make fine powder
7. Now tasty udupi rasam powder is ready to use
8. This rasam powder can be stored upto 3 months.

Steps for Udupi Rasam:
For Rasam(for measurements, refer ingredients section above)

1. Add one tbsp of oil in a kadai.
2. When oil is hot, add 1/2 spoon of mustard seeds, when that splutter add 3 green chillies slit lenght wise
3. Add few curry leaves to it and roast it well
4. Now add 3 fresh tomotes paste to it
5. Add 1/4 spoon of turmeric powder and 1/2 spoon of jaggery powder to it
6. when this starts to boil, add tamarind water to it and let it boil for 3-4 minutes(to remove tamarind raw smell/flavour)
7. After 3-4 minutes, add cooked dal
8. Add water to adjust conisnstency
9. Add salt to taste
10. now add 1 tbsp of rasam powder and let it boil for 1 minute(this is 3/4 liter of rasam, which takes 1 tbsp of udupi rasam powder)
11. Now adding hing water to it (compouned hing is soaked in water)
12. Now add generous amount of coriander leaves
Tasty Udupi rasam is ready :)
