Living solo offers a unique blend of solitude and serenity, a calm cadence to daily routines. As I edited this video, a grin of contentment painted my face. Despite the occasional balancing act of solo living, I find immense joy in it. There's a certain beauty in the stillness, the discipline to stay on track even on sluggish days, and the freedom to indulge in spontaneous Pad Thai dinners.

Although today was blissfully unremarkable, those protein pancakes? Amazing!! Here's the full recipe for you to try them for yourselves:

*Protein Pancakes Recipe:*

*Ingredients:*
- 2.5 cups oats
- 1/3 cup protein powder
- 1 tablespoon chia seeds
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- Sprinkle of salt
- Sprinkle of cinnamon
- 2 eggs + 1 egg white
- 1 1/4 cups water

*Directions:*
1. In a blender, combine oats, protein powder, chia seeds, baking powder, baking soda, salt, cinnamon, eggs, and water.
2. Blend until smooth.
3. Heat a pan (preferably cast iron) and grease with oil or butter.
4. Pour batter into the pan or use a scoop for uniform pancakes.
5. Allow pancakes to cook on one side until bubbles form and the edges appear dry.
6. Flip pancakes over and cook for another minute or until golden brown.
7. Repeat until all the batter is used.
8. Enjoy your stack of approximately 16-17 3-inch diameter pancakes!
