Ingredients
FOR BOILING RICE :
Water - 1/2 Litre
Salt - As per taste
Clarified butter / Ghee - 1/4 Teaspoon
Basmati rice / Chawal - 1 Cup
FOR PREPARING MIX VEG RICE :
Clarified butter / Ghee - 2 Tablespoons
Onion / Pyaz - 1 Sliced
Bay Leaf / Tej Patta - 1
Cloves / Laung - 1 to 2
Black peppercorns / Kali mirch - 2 to 3
Cardamom / Elaichi - 1
Mustard seeds / Rai - 1/4 Teaspoon
Cinnamon / Dal Chinni - 1 Stick
Cumin seeds / Jeera - 1 Teaspoon
Green chilli / Hari mirch - 1 Slited
Capsicum - 1/2 Finely hopped
Beans - 1/4 Cup Finely chopped
Carrot / Gajar - 1 Finely chopped
Salt - As per taste
Fenugreek leaves / Methi - A handful finely chopped
Spinach / Palak - A handful finely chopped
Coriander leaves / Hara dhaniya - A handful + For garnishing
Turmeric powder / Haldi powder - 1/2 Teaspoon
All spice mix powder / Garam masala - 1/4 Teaspoon
Dry fenugreek leaves / Kasuri methi - 1 Teaspoon
Lemon juice / Nimbu ka ras - Of 1/2 Lemon
FOR PREPARING RAITA :
Curd / Dahi - 1 Cup whisked
Dry mint powder / Phudina powder - 1/4 Teaspoon
Red chilli powder / Lal mirchi powder - A pinch
Roasted cumin seeds powder / Jeera powder - 1/4 Teaspoon
Instructions
FOR BOILING RICE :
1. Soak rice in water for 30 minutes.
2. Boil water in a pan. Add salt, ghee, and soaked rice. Mix well. Let it cook for 7 to 8 minutes on medium flame.
3. Keep stirring occasionally. Once done turn off the flame. Strain water. Keep it aside.
FOR PREPARING MIX VEG RICE :
4. Heat ghee in a pan. Add bay leaf, cloves, black peppercorns, cardamom, mustard seeds, cinnamon stick, cumin seeds, green chilli, and onion. Mix well.
5. Then add capsicum and beans. Mix well. Now add carrot and salt. Mix well.
6. Now add fenugreek leaves, spinach, and coriander leaves. Mix well.
7. Then add turmeric powder and all spice mix powder. Mix well.
8. Now add cooked rice. Mix well with light hands. Add dry fenugreek leaves by rubbing between your palm and coriander leaves. Mix well.
8. Once done, Turn off the flame and add lemon juice. Mix well. Take it out to a serving plate.
FOR PREPARING RAITA :
9. Take curd in a bowl. Add dry mint powder, red chilli powder, roasted cumin seeds powder. Mix well.
