传统糕点-金瓜糕。现在很难买到的金瓜糕,自己动手做吧,做法非常简单。非常适合早餐或下午茶享用

Pan size: 25cm
Steam for around 20 minutes

🥣Ingredients
1️⃣Filling 馅料
500g pumpkin 金瓜
100g dried shrimp 虾米
1tbsp minced garlic 蒜米
1tbsp minced shallots 葱头

2️⃣Batter 面糊
500g rice flour 粘米粉
75g tapioca flour 木薯粉
1000ml water 水

3️⃣Seasoning调味料
1 tbsp salt 盐
1 tsp sugar 糖
1 tsp chicken stock 鸡精粉
1 tsp ground white pepper 白胡椒粉

4️⃣Garnishing 装饰
10 shallots 葱头
1 bunch of spring onion 青葱

📝Steps:
1. Wash & soak the dried shrimp till soften. Drain it.
2. Fried the shallots till golden & set a side.
3. Dice the pumpkin, take a small portion & shred it.
4. Steam the pumpkin till soften & mash it.
5. Add all the batter ingredients together & mix well.
6. Add in all the seasonings into batter & mix well.
7. Heat the oil, stir fry the garlic & shallots till fragrant, add in the dried shrimp & stir fry till crispy.
8. Add in the shredded pumpkin, follow by mashed pumpkin.
9. Add in the batter & cook in low heat till thicken.
10. Transfer the mixture into mould & steam till cook, approximately 20 minutes.
11. Once cook, remove it from heat & allow to cool.
12. Sprinkle the garnishing & ready to serve.
