Hi, In this video I will show you how to make Aloo Ki Dry Sabzi, Dry Potato Curry which is often eaten with Pooris and Parathas, also this Aloo ki Dry Sabzi does not spoil soon, so we have been packing this dry aloo sabzi for traveling 24 hrs and more, along with Pooris and Parathas.
There are a few more varieties of such vegetable curries which can be Packed for traveling. I will host such recipe videos very soon.
So let us Collect the Ingredients for making Aloo ki Dry Sabji for 4 persons.
6-7 Potatoes, soak them in water and wash the well to remove all dirt/mud.
Cut the Potatoes into medium sized equally thick pieces along with the skin.
4-5 Big Spoon Cooking Oil, sufficient to shallow fry the Potatoes,
1 Tsp Rai/mustard seeds,
1/2 tsp Jeera/cumin seeds,
1/4 tsp Hing/Asafoetida,
Salt to taste,
1-1/2 tsp Red Chilly powder,
1 Tsp Dhania/dry coriander powder,
1/4 tsp Haldi/Turmeric Powder
1/2 tsp Amchur/Dry Mango Powder,
So Let us begin making Dry Aloo Ki Sabji/Potato curry Dry.
Place a frying pan on the gas stove and add 4 Big spoon oil /sufficient oil to shallow fry the potatoes and heat the oil.
Now add the Mustard seeds, Jeera, and Hing/Asafoetida and add the cut potatoes mix well and add 1 tsp salt and mix again.
Stir fry them for a while, and cook them with the lid closed for 2-3 minutes on low/medium flame.
Now add the 1-1/2 tsp Red Chilly powder,1 Tsp Dhania/dry coriander powder,1/4 tsp Haldi/Turmeric Powder and mix well and
Cook the potato curry with the lid closed on low flame until the potatoes get cooked and crispy.
Now add 1/2 Amchur/Dry Mango powder and mix well, check for salt to taste and cook the potato curry for 2 minutes on Low Flame
and the Dry Potato Curry/ Aloo ki Sukki sabji is Ready.
If eating at home you can garnish with Green Coriander Leaves else if packing for travel don't add the coriander leaves and let the Aloo Ki Sabzi cool completely before packing.
