Stuffed quails and squabs are an Arabic delicacy often cooked in Egypt and the Sham region. They are traditionally stuffed with Freekeh, but rice can be substituted for convenience.
Squabs, which are the young doves, usually yield more meat, and have a less gamy flavor than quails. However, they are typically more difficult to find in Europe and North America. Middle Eastern Stores often carry quails. We bought these Halal quails from a local super market in New Hampshire.
In this video we followed the traditional way of boiling then frying the quails, but you can also roast them instead. We boiled them to make a broth that can be used to make delicious rice or soups.
