To Make Batter

Raw Rice - 1 Cup ( 1 Cup - 250 Ml )
Urad Dal - 1/4 Cup
Fenugreek Seeds - 1/2 Tsp
Water
Salt - 1/2 Tsp

For Tempering

Oil - 2 Tsp
Urad Dal - 1 Tsp
Chana Dal - 1 1/2 Tsp
Mustard Seeds - 1 Tsp
Cumin Seeds - 1 Tsp
Hing / Asafoetida - 1/2 Tsp
Ginger
Green Chilli - 2 Nos
Onion - 1 No.
Salt - 1/2 Tsp
Curry Leaves
Grated Coconut - 2 Tbsp
Coriander Leaves
Water
Oil

METHOD

1. Soak rice in water for 3 hours.
2. Soak urad dal and fenugreek seeds in water for 3 hours.
3. After 3 hours, strain off the excess water and grind the soaked rice along with dal into a smooth batter by adding a little water at a time.
4. Once done, transfer the batter to a large bowl, mix a little water and ferment for at least 8 hours.
5. After 8 hours, take a pan, add oil to it. Add chana dal, urad dal, mustard seeds and cumin seeds.
6. Once the mustard seeds start splattering, add hing, chopped ginger, green chillies and onions.
7. Next add curry leaves, salt and mix.
8. Lastly add grated coconut and coriander leaves. Mix well.
9. Transfer this mixture to the fermented batter. Mix well and add water if the batter is too thick.
10. Check for seasoning and keep the batter aside.
11. Heat a paniyaram skillet and apply oil in the moulds.
12. Gently drop the paniyaram batter into the moulds and cook until the bottom side is fully turned to golden brown for all the paniyarams.
13. Once done, flip them all to the other side and cook until they too are turned to golden brown color.
14. After the paniyarams are cooked nicely on both sides, remove them from the skillet and transfer them to a bowl.
15. Tasty Chettinad Kuzhi Paniyarams are ready to be served hot with any chutney of your choice or sambar by the side.
