Today we're designing a fine dining style entrée, featuring a mushroom risotto and savoury tuile. First we'll make a delicious mushroom risotto to use as our base, then we'll make the accompaniments - a parmesan tuile, caramelised red onions, deep fried mushroom chips and a green salad with a vinaigrette dressing.

When all our components are ready, we'll plate it up in a fine dining style and discuss some presentation aspects of the dish. Adding a range of colours and textures can make a huge difference to the overall dish, so in this video we learn how to incorporate these things when designing our own dishes.

===== RECIPE =====

= Mushroom Risotto =
- 20g (5 teaspoons) butter
- 20g (5 teaspoons) oil
- 1 clove garlic, crushed
- 30g (1/4 of a medium sized onion) onion, finely diced
- Fresh thyme
- 160g (5oz) short grain rice (I used arborio)
- 30ml (2 tablespoons) white wine
- 375g (1 1/2 cup) vegetable or chicken stock
- 50g (1/3 cup) cheese, grated
- 20g (5 teaspoons) parmesan cheese, grated
- 100g (1/2 cup) mushrooms, diced
- Salt and pepper

= Savoury Tuile =
- 30g (1oz) egg white
- 20g (1 1/2 tablespoons) parmesan cheese
- 15g (1 1/4 tablespoons) butter, melted
- 10g (1 tablespoon) flour
- 10g (1 tablespoon) cornflour
- Chopped herbs or other flavourings

= Vinaigrette Dressing =
- 1 teaspoon white wine vinegar
- 3 teaspoons sundried tomato jar oil
- 1 teaspoon Dijon mustard
- 1/2 teaspoon honey
- Pinch of salt

= Caramelised Red Onions =
- 1 red onion, thinly sliced
- Oil and butter for frying
- 1 tablespoon balsamic vinegar
- Fresh thyme
- Pinch of salt
- 2 teaspoons brown sugar

= Other components =
- Sundried tomatoes, diced
- Salad greens
- Salted deep fried mushroom slices
