Hey family!! In today's video I'm sharing Two Easy Homemade Weeknight Family Meals with y'all!

INGREDIENTS
NOTE: This is the original recipe, I made more in the video.

2 lbs boneless skinless chicken breast thinly cut or pounded
6 tbsp BBQ sauce
4 oz bacon regular or thin sliced
4 oz grape tomatoes quartered
1 cup colby jack cheese shredded
2 green onions sliced

INSTRUCTIONS
Preheat the oven to 425˚F. NOTE: In the video I said 350, but it is 425. My bad... LOL!!
Place chicken flat in the bottom of a baking dish. Spread 1-2 tbsp BBQ sauce on each chicken breast.
Cut the bacon into slices equal to the size of the chicken breast and lay it over the top of the chicken. Bake uncovered for 20 minutes. If you want crispier edges on your bacon, broil for 2-5 additional minutes.
Remove from oven and sprinkle cheese over the top, then turn oven to 350˚F and cook for 5 additional minutes, or until chicken is cooked through (165˚F internal temp.)
Once done, sprinkle tomatoes and green onions over the top.

Ingredients:
1 Box Ready Made Pie Crust
1/4 cup unsalted butter
1/3 cup diced onion
2 medium carrots sliced (about 1 cup)
1 stalk celery sliced (about ½ cup)
1/3 cup all-purpose flour
1 1/2 teaspoons minced fresh thyme
1 tablespoon minced fresh Italian parsley
1 teaspoon salt
1/2 teaspoon black pepper
1 3/4 cups chicken broth
1/2 cup heavy cream
3 cups shredded chicken or turkey
1 cup frozen peas
2 cloves garlic minced

Instructions
Preheat oven to 400°F.
To make the filling, heat the butter over medium-high heat in a large skillet. Add the onions, carrots, celery, and garlic and cook until tender, stirring occasionally. Whisk in the flour, salt, black pepper, thyme, parsley, chicken broth, and heavy cream. Whisk until there are no flour lumps and then simmer over medium-low heat for 10 minutes or until sauce has thickened. Stir in the shredded chicken or turkey and frozen peas. Remove from heat.
Place pie crust in the bottom of pie plate and fill with filling. Top with the other pie crust and press along the edges to seal. Cover sides with foil so they don't get too done.
Bake for 45 minutes, or until crust is golden brown. Cool for 10 minutes, cut into slices and serve.
