Thick & Creamy Oat Milk Yogurt!
Ingredients:
1 cup Rolled Oats (soaked for at least 1 hour)
3 cups Water
3 Tablespoons Sugar
1 packet of Yogurt Starter or at least 2 Tablespoons of non-dairy yogurt

Drain the soaked Oats and blend with the Water until smooth & creamy. Heat the mixture in a heavy bottomed pan until it just starts to boil, stirring constantly to avoid burning. Stir in the sugar and let cool for at least 30 minutes. When cooled, mix in the yogurt starter. Pour into desired containers and place in the Instant Pot (or a warm place) on the yogurt setting for 8-12 hours. Add fruit if desired & enjoy!
