Sugarcane Shrimp Skewers, Chao Tom (Chạo Tôm). Delicious savory sweet little shrimp morsels with sugarcane skewers. These are a classic Vietnamese appetizer from central Vietnam that make for great party food, or like in our family, served as the main meal.

RECIPE INGREDIENTS & MEASUREMENTS: Yields 12 Sugarcane Shrimp

Soup Stock:
1 lb. shrimp (454g)
4 garlic cloves (16g)
2 small shallots (35g)
1 tbsp. fish sauce (15ml): https://amzn.to/2NOxy2i
1 tbsp. vegetable oil (15ml)
1 tsp. mushroom seasoning (3g): https://amzn.to/2xfsnkw
½ tsp. black pepper (1.5g)
2 tsp. corn starch (6g)
1 tbsp. sugar (10g)
½ tsp. salt (1.5g)

SUBSTITUTIONS:
- sugar cane: fresh lemon grass stalks are a good alternative as they flavor the shrimp nicely and are sturdy.
- Shrimp: prawns or even chicken may be used. If using chicken steam for 25 minutes.
- Shallots: yellow onions, scallions, or red onion.
- Sugar: crushed Palm Sugar or brown sugar may also be used.
- Vegetable oil: traditionally pork fat is used but you can also use fat rendered from cooking bacon.
- Mushroom seasoning: pork seasoning, chicken bouillon, or any other seasoning you like.
- Fish Sauce: Soy sauce may be used instead.
-Cornstarch: potato starch may be used as well.

Example of Optional Garnishes:
- Lettuce Leaves
- Pickled Daikon & Carrots
- Bean Sprouts
- Cilantro
- Chopped Thai Chilies
- Mint
- Sliced cucumber
- Purple perilla - The flavor is grassy with notes of anise or licorice.

Alternativer Steaming Method:
If you don’t have a steam basket you can place a small bowl inside a wok or large pan and add some water, enough to just cover the rim of the small bowl. Then on top of the small bowl place a large plate where you can then add the sugarcane shrimp skewers. Cover and steam for 8 minutes. Notes:
* Any Shrimp & Sugarcane Skewers not fried can be stored in the refrigerator for up to 3 days until you are ready to fry or grill them.

** Cooked fine rice vermicelli noodles (Bánh Hỏi) can be kept for 2 hours outside if covered with plastic wrap so they don’t dry out. These noodles are pretty fragile and are best enjoyed when made fresh.

*** To grill lightly coat the sugarcane shrimp skewers with oil and place on a hot grill. Rotate every 2 minutes until grill marks are on all sides, for a total grill time of 6 – 8 minutes.

**** Always wash hands before beginning a recipe and after handling raw meats. Sorry guys the science geek in me just has to say this even though everyone knows this already. 😅
