Soto or coto is a traditional Indonesian soup mainly composed of broth, meat, and vegetables. In several regions in Indonesia, they have developed their own special soto recipe. One of them is from Makassar called Coto Makassar, which is made from beef combined with various kinds of beef offal.

Coto Makassar is usually served with Buras (a type of rice cake, cooked with coconut milk packed inside a banana leaf pouch) or Ketupat (a Javanese rice cake packed inside a diamond-shaped container of palm leaf pouch). Since I don't have palm leaves, Soto Makassar in this video is served with Lontong (rice cakes packed in a cylindrical banana leaf pouch).

Ingredients for Lontong (rice cake):

2 cups of long grain jasmine rice (500-520 grams)
500-750 grams of banana leaves
toothpicks

Ingredients for Coto Makassar:

about 500 grams of beef brisket
about 500 grams of beef bones
up to 500 grams of pre-cooked, cleaned tripe
up to 500 grams of beef heart
1 tablespoon of rice
8 cm of ginger
8-10 bay leaves
1-1,5 tablespoons of salt
3 stalks of lemongrass
3 candlenuts (or 6-8 macadamia nuts)
2 teaspoons of coriander seeds
1 teaspoon of cumin seeds
1 teaspoon of peppercorns
3-4 cm of galangal
6-8 garlic cloves
2 medium-sized banana shallots (or 6-8 small regular shallots)
100 grams of raw peanuts
8-10 tablespoons of cooking oil
2 small pieces of cinnamon stick
1/2 nutmeg
5 kaffir lime leaves
2 teaspoons of sugar

Usually Coto Makassar is served with Sambal Tauco (Indonesian chili sauce with tauco), especially for those who like to eat spicy food.Tauco is a paste made from preserved fermented yellow soybeans in Chinese Indonesian and Malaysian cuisines.

Ingredients for Sambal Tauco:

5-7 garlic cloves
4 small or medium-sized banana shallots (or 6-8 small regular shallots)
some large red chili peppers (at will)
some red chili peppers (at will)
4-6 tablespoons of cooking oil
1-2 teaspoons of sugar
2-3 tablespoons of tauco (fermented yellow soybean paste)


Additional ingredients (optional):

1 handful of celery leaves
2-3 green onions
1-2 limes
fried onion
sweet soy sauce
