600 gm Red Snapper or Sea bass
1/2 tsp salt & pepper
1/2 tsp cornstarch
1Tabsp Cooking Oil
3 Stalks Spring onions (Scallions)

Finely ground Ingredients
1 Stalk Torch Ginger bud (bunga kantan)
1 Stalk lemon grass
5 Red Chilies
2 Kaffir lime leaves
2cm young ginger (knob, peeled and finely sliced)
2 Cloves garlic (peeled and finely chopped)

Seasoning
1/2 tsp Salt
2 setengah Tbsp Sugar
1 Tabsp Lime juice
1 setengah tsp Anchovy stock granules (serbuk ikan bilis)
1/4 tsp Cornflour (cornstarch)

Garnishing
1 Tabsp Sliced Torch ginger bud
1Tabsp Red Chili (Sliced)
1 Tabsp Kaffir lime leaves (sliced)

1. Marinate fish with salt, cornflour and pepper for 15 minutes
2. Grease steaming tray with oil. n Place spring onions on steaming tray.
3. Place marinated fish on top of spring onions.
4. Mix finely ground ingredients with seasoning. When the mixture is well combined, pour it over fish.
5. Steam over high heat for 20 minutes or until cooked. Fish is cooked when the flesh turns from translucent to opaque.
6. Garnish with torch ginger bud chill and kaffir lime leaves.
serve hot.

Note:

The cooking time depends on the thickness of the fish meat. thinner fish can be cooked between 10 - 25 minutes.
Check between 8 - 15 minutes and adjust the cooking time accordingly.


B Melayu

Ikan kukus Nyonya yang sangat lazat

600 gm Ikan Merah atau Ikan Siakap

1/2 sudu kecil garam
1/2 sudu kecil tepung jagung
1sudu besar Minyak Masak
3 batang Daun bawang

B (Bahan kisar)

1 batang bunga kantan
1 batang serai
5 batang lada merah
2 helai daun limau nipis
2cm halia muda (hiris)
2 ulas bawang putih ( (cincang)

C
1/2 sudu kecil garam & lada sulah
2 setengah sudu besar gula
1 sudu besar perahan air limau nipis
11/2 sudu kecil serbuk ikan bilis
1/4 sudu kecil tepung jagung


1. Sapu ikan dengan garam, tepung jagung dan serbuk lada sulah dan perap selama 15 minit.
2. Sapu minyak pada dulang kukusan dan letakkan daun bawang .
3. Letakkan ikan yang telah diperap atas daun bawang.
4. Gaulkan bahan B & C, kemudian tuangkan keatas ikan.
5. Kukus selam 20 minit atau ikan kelihatan sudah masak ia itu kulit ikan berubah warna..
6. Hiasi dengan bunga kantan, lada merah dan daun limau.

Hidangkan ketika masih panas.
