Tzatziki is a classic Greek dip made with yogurt, cucumber, garlic, and herbs. It's traditionally made with dairy yogurt, but we're swapping it out for creamy coconut yogurt to create a vegan version. By using watercress stems, we're not only adding a unique flavor but also reducing food waste. Watercress stems are often discarded, but they're packed with nutrients and have a slightly peppery taste that complements the tzatziki perfectly.

I absolutely love this vegan tzatziki recipe! It's fresh, flavorful, and incredibly easy to make. INGREDIENTS
350g/ 1 cup unsweetened coconut yogurt
1/2 cucumber (finely diced)
2 cloves garlic (minced/ grated)
1 lime (juiced)
15g /1/4 cup chopped fresh mint (shredded/ chopped)
Watercress stems (finely chopped)

INSTRUCTIONS
1. Slice your cucumbers in half, then into quarters and then julienne slice these, to enable really finely dicing, in order to get the right consistency.
2. Finely chop your watercress stems (optional) and add to your cucumber.
3. Finely grate or mince your garlic and add to your mixture.
4. Juice your lime and add.
5. Pull several mint leaves from a stemmed bunch and shred/ finely chop, then add to mix.
6. In a medium bowl, combine the coconut yogurt, grated cucumber, minced garlic, lime juice, and chopped mint.
7. Stir well to combine all the ingredients.

TIPS/ ADVICE
Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
For a thicker tzatziki, strain the grated cucumber to remove excess water before adding it to the bowl.
replace the lime with preserved lemon, to experiment with your citrus notes.
Adjust the amount of lime juice and mint to your taste preference.
Serve with pita bread, vegetables, or as a topping for grilled tofu or fish.
