Set smoker to run between 225 and 275. This smoke I was running around 230 to 240. When the meat reaches 165 internal I wrapped the butts and added some honey to the butts. let them come up to internal temp of 200 to 205... probe for doneness.
take off the smoker, let sit wrapped for at least an hour then open the foil and pull the pork into shreds... add your favorite sauce eat straight or on buns for sandwiches... enjoy.
