This Pancit recipe is always requested by my co-workers every time we have a party or potluck at work. In this recipe I used 3 kinds of noodles that make this recipe different. The flavor of shrimp and variety of vegetables make this recipe so delicious. Try my recipe down below!

Pancit With Shrimp

INGREDIENTS:

Noodles - I used 3 kind of noodles:
*Golden Bihon cornstarch sticks 16 oz
*Pancit canton 54 grams
*1 bundle or 38 grams Vermicelli
1 lb deveined raw shrimp
4 cloves garlic
1/2 of medium onion
1 small carrot
1- medium green bell pepper
1- medium red bell pepper
2- strands celery
1 small size cabbage
2 Tbsp. Olive oil
½ cup soy sauce
2 ¾ cups water
1 tsp pepper flakes
2 tsp salt
1 tsp ground black pepper

INSTRUCTIONS:

Wash and cut all the vegetables
Peel shrimp
Transfer the skin into the small pot, add 2 ¼ cups water and bring to a boil
After boiling, strain the liquid
Soak noodles for 8 minutes
Add olive oil to a heated pan
Cook the shrimp just a minute each side and add ½ tsp salt,¼ tsp black ground pepper and ½ tsp pepper flakes while cooking
When it's done, remove from the pan
Saute onion and garlic, cook until translucent
Add vegetables
Add 1 tsp salt and ¼ tsp ground black pepper and toss
Cook for just 2 minutes
Add cabbage, ¼ cup soy sauce, ¼ cup water and toss all together, cook for another minute
Remove vegetables from the pan
Add shrimp liquid into the pan and let it boil
Add noodles and and gently toss the noodles with two spatula
turn the heat to low
Add ¼ cup soy sauce, 1 tsp salt and ½ tsp black pepper and toss
Then, add vegetables and toss again
Add cooked shrimp and ½ tsp pepper flakes and toss it all together

Notes:

*Do not overcook vegetables
*Do not overcook shrimp
*Do not over soak the noodles
*Gently toss with two spatula
*Adjust salt and black pepper
*If ever you need to add water, use hot water not cold
