蒜蓉南瓜蒸豬仔骨

材料:
急凍豬仔骨12兩
南瓜1斤
蒜頭10粒
辣椒仔1隻

處理:
1. 豬仔骨,清水解凍。
2. 豬仔骨解凍後,倒去水分,用粗鹽1茶匙乸10分鐘,去除雪、腥味及加入少許鹹味。
3. 蒜頭,去皮。
辣椒仔,打直1開2 ,去籽,清水洗乾淨。
4. 蒜頭及辣椒仔,刴碎。
5. 豬仔骨,清水沖洗乾淨,擎乾水,用廚紙索乾,切一舊舊。
6. 豬仔骨調味:
a. 蒜蓉及辣椒粒
b. 生粉1湯匙
c. 油半湯匙
d. 胡椒粉少許
e. 糖1茶匙
f. 生抽半湯匙
g. 蠔油1湯匙
撈勻,醃30分鐘或以上。
7. 南瓜, 打橫切1吋1舊,去皮,去籽,1開3,排好在碟上,放排骨在南瓜上。

烹調:
1. 大火煲滾1鑊水。
2. 大火蒸排骨25分鐘。
3. 蒸好,灑上辣椒粒。
4. 完成,可享用。

Steam baby pork ribs with pumpkin and garlics

Ingredients:
Frozen baby pork ribs 12 taels
Pumpkin 1 catty
Garlics 10 Nos.
Chili 1 No.

Preparation:
1. Baby pork ribs, defrost in tap water.
2. The pork ribs have been defrosted, pour away water. Season them with cooking salt 1 tsp for 10 minutes, to remove unpleasant smells and add some salty tastes to them.
3. Garlics, get them peeled.
Chili, divide it into 2 shares vertically. Remove seeds and get it rinsed.
4. Garlics and chili, chop well.
5. The pork, rinse with tap water. Drain. Dry with kitchen towels. Dice in cubes.
6. Season the pork:
a. Garlics and chili cubes
b. Tapioca starch 1 tbsp
c. Oil 0.5 tbsp
d. Pepper little
e. Sugar 1 tsp
f. Light soya sauce 0.5 tbsp
g. Oyster sauce 1 tbsp
Mix well. Season for 30 minutes or more.
7. The pumpkin, cut horizontally with 1" per each. Get them peeled and remove seeds. Divide each into 3 shares. Put on plate in rows. Put pork ribs on top.

Steps:
1. Heat up a wok of water.
2. Steam the pork ribs at high flame for 25 minutes.
3. Steam well. Put chili cubes on top.
4. Complete. Serve.
